Job overview
Our client is looking for a motivated live-in Chef de Partie to join their boutique hotel on the beautiful Isle of Islay. This exciting opportunity would suit an individual with a passionate interest in cooking delicious food with local, seasonal produce.
This private estate produces high-quality grass-fed beef and lamb, a substantial amount of wild game and has its own kitchen garden. On top of this Islay’s bountiful coast produces fabulous seafood including lobster, crab, langoustines, oysters, and scallops.
This is a unique opportunity to be part of an exciting field-to-fork team giving the successful applicant the ability to cook with fresh, top-quality produce.
Job duties:
- Preparing, cooking and presenting high quality dishes
- Assisting the Head Chef and Sous Chef in creating menu items, recipes and developing dishes
- Preparing meat and fish
- Assisting with the management of health and safety
- Assisting with the management of food hygiene practices
- Managing and training any Commis Chefs
- Monitoring portion and waste control
- Overseeing the maintenance of kitchen and food safety standards
Candidates must be/have:
- Minimum 1 years relevant experience as a Chef de Partie
- Awareness of manual handling techniques
- Awareness of Control of Substances Hazardous to Health Regulations (COSHH) and chemical safety
- Experience of kitchen equipment
- Experience of dangerous equipment such as knives
- Understandable level of English spoken and written
- A clean driver’s license
- Knowledge and ability to run a section
- Ability to work without close supervision
- Ability to manage Commis Chefs
- Ability to produce good quality food in all sections
- Good oral communication, team management skills and a high level of attention to detail
- Good level of numeracy
- Enthusiasm to develop your own skills and knowledge plus those around you
- Adaptability to change and willingness to embrace new ideas and processes
- Positive and approachable manner
Desirable qualifications include:
- Level 2 Health and Safety in the Workplace Award
- Level 3 Food Safety Awards
Accommodation
Rent free cottage on the estate, two-bedroom self-contained annexe.
Plus, up to £50 per week payable towards the electricity and council tax.
